It’s so easy I cannot even make this into a recipe card for you because “throw everything in a pot then a blender” is not a recipe.

So, I don’t know why I never thought to do this before, but necessity being the Mother that she is, I “discovered” this extremely basic soup on accident. Since it was super tasty and took MINUTES to prepare, I thought I would share it with you and allow you to mock my utter lack of culinary awareness.  

Due to a dental extravaganza that I enjoyed yesterday, I can’t actually chew for a few days. So, I was on the hunt for something filling and threw the following into a pot:

  • 3-4 celery stalks (cut off ends and roughed chopped)
  • 3-4 carrots (cut off ends and roughed chopped)
  • 1 small onion (diced; you can use 1/2 an onion)
  • 50/50 veggie broth and water (approximately 2 cups each – enough to cover everything plus a bit (how’s that for exact?)

I boiled it until the veggies were soft, but it wasn’t very exciting and I couldn’t actually chew it (duh). Then – inspiration struck! I dumped the batch into my Vitamix and threw in a few tablespoons of flax seeds to thicken it all up, plus several herbs/spices from the spice rack (literally whatever sounded good – parsley, thyme, sage, sea salt).

VOILA! I had a warm, yummy, totally satisfying Veggie Puree that was the bomb. 

Looking forward to chewing again soon, but you don’t need a dental extravaganza to enjoy this so-easy-it’s-stupid-easy vegetable soup.
