4-Ingredient Pumpkin Bake
This very simple dish fills the "make me feel full comfort food that is actually good for me" need. Good nutrients, super easy and filling!

  1. - 1 can of pumpkin (BPA free)
  2. - Natural sweetener of choice (1/4 cup honey -or- 2 tbsp xylitol work well)
  3. - 1 heaping tbsp Gelatin
  4. - 3 eggs
  5. - Spices: I use pumpkin pie spice and salt
  1. Preheat oven to 350F
  2. Dissolve the gelatin powder in tbsp of cold water
  3. Whisk 3 eggs and stir in the gelatin and xylitol (or honey)
  4. Add can of pumpkin and spices to taste
  5. Hand whisk until mixed and then pour into ceramic / glass baking dish
  6. Heat until there are no runny spots (approximately 30 mins); may want to lower to 330F and cook longer
  1. This is not a scientific recipe by any means. You will learn a lot after your 1st batch regarding what you like for sweetener, amount of spices, baking time, etc. But, give it a try - it's so easy and worth it - filling and nutritious!
